Nancy Adler is a career photographer and photography educator based in New York City. Nancy´s professional work focuses on portrait and event photography. Her sustained practice in macrobiotics, yoga and meditation have attracted her to health retreats worldwide to document the energy of the people, lectures, workshops and inspiring natural settings. The art of the portrait is Nancy’s specialty, she blends strobe and ambient light to create beautiful images. For her own personal artwork she incorporates collage and encaustic techniques to create lyrical, ephemeral imagery. Her body of work can be seen at

Early risers will walk or drive to the lake and take in all of the sights and sounds of pristine morning at beautiful Pinecrest lake.

Professional photographer, Nancy Adler, will suggest creative ways to “see,” and “frame” nature’s wonders.

Smart Phone Food Photography - Workshop
Taking great food pictures on the go while having a great meal while dining out or at home helps to show off your dishes to share with friends or social media. Cynthia Briscoe

Cynthia Briscoe was honored by Michio Kushi in 2012 with an Aveline Kushi Award for her decades of dedication to macrobiotic teaching and service.

Cynthia is one of America’s most respected macrobiotic cooking instructors. Her cooking is as delicious as it gets. She co-founded and co-directed The Macrobiotic Center of Kansas City during the 1980’s.

Cynthia was the co-owner and head chef of The Amber Waves Café, an award-winning macrobiotic restaurant in Kansas City, and one of the most successful and longest-running macrobiotic restaurants in North America.

From 1981-1991 Cynthia supervised macrobiotic cooking education in the central states, and from 1991-1998 she was a main cooking instructor, kitchen supervisor and kitchen apprentice trainer at the Vega Study Center in California, in association with Cornellia Aihara.

She has been the kitchen coordinator for macrobiotic camps and retreats, including the popular Harvest Moon Retreats and Tall Oaks Camps in the midwest. In 1999 she was the guest cooking instructor at the macrobiotic retreat on Hvar Island, Croatia.

In recent years Cynthia has served as a cooking instructor at the Kushi Institute’s annual Summer Conference and the French Meadows Summer Camp. In 2004 she was invited to appear on ABC News to demonstrate macrobiotic cooking. Her cooking instruction is admired for its clarity, patience and gentleness.

David Briscoe

David Briscoe was honored in 2012 by Michio Kushi and Kushi Institute International with a prestigious Aveline Kushi Award, regarded by many as “the Oscar of macrobiotics,” for his decades of dedication to macrobiotic education and counseling.

David is one of the most experienced macrobiotic teachers and counselors in the world today. Since 1972 he has gained expertise in every facet of macrobiotics, including personal practice, philosophy, healing principles, teaching, counseling, private healing chef service, restaurant ownership and educational center development.

He is widely considered one of the finest of macrobiotic chefs, having prepared countless delicious meals, including gourmet Hollywood buffets and ethnic international macrobiotic cuisine for large groups and events, and strengthening healing meals for health recovery for private individuals.

Through his 30+ years of cooking classes, chef-training programs, executive chef experience, co-owner of the award-winning Amber Waves Café, and world-wide travels, he has taught innumerable students the creative joy of healthy macrobiotic cooking. His private macrobiotic chef services are highly sought after and available to a limited number of selected clients. He is currently writing a series of cookbooks with Cynthia Briscoe.

David also provides consultant services to restaurants, professional chefs, macrobiotic business start-ups, web site creators, multi-media elearning authors, online course developers, and the natural foods industry.

One of the most experienced and respected public speakers in the world of macrobiotics, David now offers private public speaking training and mentorship to those wishing to develop their skill and confidence in this area.

In 1975 he was given the honor of being one of the few one-on-one macrobiotic apprentices to the late macrobiotic master, Noboru Muramoto, author of Healing Ourselves. In 1983 he was among the first to be certified by the Kushi Institute’s premier macrobiotic counselor accreditation program. During the 70’s and 80’s, David established macrobiotic education programs and centers throughout the U.S.

He has appeared on national TV programs and radio shows, including Dr. John McDougall’s radio show and numerous other live radio shows, ABC News, PBS, and the HBO® Special, “Six Months to Live.” He is the co-author of A Personal Peace, contributing author to The Whole Mind and a regular columnist for Macrobiotics Today, the world’s leading macrobiotic magazine.

David has developed macrobiotic curriculum and instruction programs for various educational organizations, applying his experience as a former secondary school teacher and as a trainer of teachers at the University of Kansas. He is a macrobiotic education visionary who first made use of the power of the internet for macrobiotic teaching and counseling, and has become the leader in developing online multi-media macrobiotic courses and training, launching his first online courses in 1999.

David’s online and on-site training courses have attracted many from the modern healing fields, including doctors, nurses, psychiatrists, pediatricians, gynecologists, body therapists, nutritionists, dietitians, and other interested students from all walks of life and over the world. He is regarded as one of the top trainers of macrobiotic counselors. Through his trainings, David hopes to be instrumental in developing the future generation of macrobiotic counselors, teachers and leaders.

David is well known for his skilled and personal approach to private macrobiotic counseling. He is highly regarded for his vast experience in the areas of macrobiotic healing diet, home remedies and lifestyle re-balancing.

In 1990 the late macrobiotic master, Herman Aihara, invited David to be his administrative, teaching and counseling associate at The Vega Study Center in California, and from 1991-1998 David worked closely with Herman. After Herman’s passing, David co-founded Macrobiotics America-Macrobiotics Global, the first macrobiotic organization to offer multi-media distance learning courses via the internet (www.macroamerica.com), beginning in 1999.

David travels and teaches throughout North America and overseas, speaking to medical and lay audiences, and he has been a featured presenter at the major macrobiotic camps and conferences, including The Kushi Institute Summer Conference, French Meadows Summer Camp, The Fall Health Classic, One World Festival in the UK, and The Whole World Summer School in Belgium.

David also served as a guest faculty member at the world-famous Kushi Institute in Becket, MA. He holds the honorary position of being a macrobiotic counselor for The George Ohsawa Macrobiotic Foundation of Chico, CA, the oldest macrobiotic education and publishing organization in North America. David was recently invited by Texas A&M University to participate in the design of a residential program to help patients recover from bowel conditions, such as IBS, through a macrobiotic diet. In 2016 he was invited by the UCSD Center for Integrative Medicine to be a teacher in their Integrative Nutrition program.

Move Better - Activity
This class is a mixture of core principles for building foundational strength and creating better movement out of them. While containing some familiarity to pilates and yoga, it parcels them down to the fundamental prerequisites for effective movement. So, it can be thought of as a preparatory class, that gets one ready for yoga or pilates (or life's curve balls!) It requires a curious mind, focused attention and a capacity for awareness within one's movement. Great for those who wish to move more freely and with ease.

Get Down Dog
Downward Facing Dog - is it an inversion, an arm balance or a forward bend? One simple posture has so much going on behind the skin. It can be one of the most rewarding poses in all of yoga when done with knowledge, intention and purpose. How do you do it? How is it done?

Come learn the kinematics and the biomechanics of Adho Mukha Svanasana along with therapist/instructor Lance Brown. Gain an understanding on what to strive for in each muscle, each joint and each body part with modifications for graduation and exploration of what is unique to you. How to get there is arguably more important than the destination itself.

Movement Re-Education
As we mature in a lifetime, patterns emerge and form into semi-permanence. These patterns serve us well for efficiency in the short term. However, they could also prevent a healthy repertoire of capability from remaining available for the long term. Using developmental movements from the first stages of life and integrating them into the individual movement patterns in adulthood, we can help maintain a capacity to move well when needed. Movement re-education is for anyone who wants to incorporate activity in life that may be hampered by pain and/or restriction, or further with those that have plateaued with current lifestyle activities and desiring to identify the blocks that stand in one's way. This is not a one-time fix, it is part of the journey of self.

Sheri DeMaris, M.Ed

Sheri is a holistic health counselor who has taught whole foods/macrobiotic cooking at various restaurants and cooking schools throughout the United States and Europe for over thirty five  years. She hosts, produces and directs a local alternative health TV show, "Tea With Sheri." Sheri served as an adjunct professor in the Alternative Health Program for medical students at Hahnemann University, Philadelphia and has been a visiting chef instructor at the UCSD School of Integrative Medicine where she helped to open the doors to the Casa De Luz restaurant. 

Sheri holds  a Masters in Counseling from the College of William and Mary and a Post Masters in Counseling from Villanova University.  She has worked as a public school guidance counselor for 24 years and has created garden to plate cooking programs.

Sheri is a graduate of the Level 4 Certification at Kushi Institute, the highest academic achievement at the Institute, and completed two full years of training at the Strengthening Health Institute.

She was the guest speaker for the vegetarian festival of Tokyo Japan and has done Macrobiotic health counseling in Lier, Belgium. Sheri is also trained as a "Food is Elementary" educator and shiatsu practitioner.

Sheri offers macrobiotic cooking classes, lectures and seminars as well as individual counseling and cooking instruction. Her cookbook is entitled Macro Magic for Kids and Parents.

Carl Ferré has studied macrobiotic principles since beginning his practice in 1975. He began work at the George Ohsawa Macrobiotic Foundation in 1978. He is the current President of the Foundation, editor of Macrobiotics Today magazine, and directed the French Meadows Summer Camps for 37 years. Carl is author of Essential Guide to Macrobiotics, Acid Alkaline Companion, and compiler of Essential Ohsawa. He and family live in Chico, California.

Acid Alkaline for Stressful Times
We are experiencing increased stress from natural disasters such as hurricanes, floods, and fires to an ever increasing political divide. "Food & Intuition” Part 1 - Lecture
"Food & Intuition” Part 2 - Cooking Class
 Intuition is the inner awareness of what is right and appropriate for oneself. While often considered a gut feeling Intuition is more than a passing fancy. It is a vital force that helps us be in touch with our desires and passions. When activated Intuition is a power to enable us to make good decisions. 

We will explore the relationship between food and Intuition in two areas. One area is how Intuition can help guide us to make better food choices in the moment and when planning ahead. The other area is how food choices can shape Intuition in the fullest measure to help a person self-actualize to their greatest potential. 

The lecture will cover the guiding principles of intuition and their influence in our lives. Information is presented alongside George Ohsawa’s Seven Levels of Judgement.

The cooking class will introduce Intuition in the kitchen such as choosing food, meal planning, various cooking techniques, and eating prompts. For example: What salt do you like best? When do you use certain cooking techniques? How do you balance a meal? Is there a way to be more satisfied with simple food choices?

Kenneth E. Goff

Kenneth E. Goff is an accomplished Gong Whisperer/Percussionist, Level 3 Reiki Master, a Holistic Health Practitioner specializing in Asian Body Work and Massage, Yoga Instructor, and Meditation Guide.

Ken's sound immersion sessions employ a variety of techniques, including gongs, harmonium/bowls/percussion, massage, meditation, and yoga movement. He creates a safe and supportive space to focus the mind, relax the body and connect the spirit, to manifest a self-prescribed intention for both personal and group immersions.

People who experience gong immersions react in different ways, according to their personal journey. Common reactions range from deep relaxation, healing, or cleansing of stuck or traumatic emotions, to a meditative voyage of exploration into one's inner being: a journey of sound, connected to traveling the universe. What participants describe is a restorative, inner journey that they have never experienced before. The more a person journeys within the music sphere of gongs, the greater their personal revelations and deeper their inner journey.

Happy Healthy Retreat attendees will have a rare opportunity to experience gong immersions daily during the week. Connecting mind, body and spirit in a safe, restorative, and relaxing way will enable those on the journey to lie awake and experience the healing effects of gongs to harmonize their attunement to their journey on earth.

Gong Immersion - Activity
A ninety minute Gong Immersion with a tribe of Feng (wind gongs) and a V Elements gong. The offering will vary with a minimum of 6 and a maximum of 13 gongs.

The intention and focus of the gong immersion is to create a comfortable, relaxing, safe, welcoming, tribe experience between the vibrations of the music of the spheres and the attendees vibration so they may experience a deep, restorative, nurturing meditative and experiential sound journey on a cellular level. Imagine, being held and suspended in light, on a journey within, beyond the mind, body and into our inner/awake self.

Tanya Greve

Tanya Greve, the founder of The Yoga Garage, has been teaching yoga for nearly 20 years and is an IAYT certified Yoga Therapist. She began practicing yoga regularly in the early 1990s in NYC where she learned how to find calm in the chaos of the big city. 

Finding balance is a theme in her teaching and practice. Her group classes are fun and accessible and incorporate asana, breath work and meditation to find balance. In 2009, she began her journey into motherhood, which changed her practice and teaching profoundly.

For the last decade, Tanya has worked one-on-one with clients in her Yoga Therapy practice, where she designs a safe, personal practice to suit the needs of the individual. She draws from the yoga toolbox to address issues such as anxiety/depression, structural issues, autoimmune disorders and other imbalances. She has lead 200 hour teacher trainings, and workshops on topics that include: the Chakras, the Core and the Pelvic Floor, Mantra, Sound Healing, The Yoga Sutras and others. She lives in LA with her husband and two kids.

Ron works for Shumei America, a spiritual fellowship that originally started in 1940s Japan.  Among the practices found at Shumei is Natural Agriculture which encourages respect for the innate wisdom and spirit of nature.  With limited intervention in the growing process, nature has the ability to usher in balance and abundance.  Ron promotes this practice through garden startups, classes, and workshops in and around Los Angeles.

Mary is a passionate natural healer and believes in the power of food to balance emotional and physical well-being. She embodies a holistic lifestyle and shares her knowledge as an educator of macrobiotics/whole foods plant based diet with manual therapies of Cranio-Sacral and Lymphatic drainage and energy healing.

She currently conducts regular cooking classes and healthy life workshops in her native Singapore plus overseas collaborations in Shanghai and Manila. Last May 2017 she taught Asian healthy cooking at The Whole Health Forum in Israel.

Mary re-started her Macrobiotic journey in 2009 and pursued Macrobiotics  at Kushi Institute, Amsterdam. She remains fascinated and intrigued about vibrational cooking and the healing properties and energetics of food.

Since 2005, in the course of self discovery, she travelled solo to sacred pilgrimages in Portugal. The Camino de Santiago de Compostela in Spain, Japan, Peru, Bolivia and also lived in temples in China and ashrams in India. It was up on the Andes mountains and Lake Titicaca in Bolivia that she experienced profound transformations that enhanced her soul purpose to share and help the community towards a higher consciousness and responsibility for our personal health.

She has always dedicated herself to working with orphans since young. She lived in Shanghai for 4.5 years as a full time volunteer working with orphans and raising donations for not only basic necessities but also for education and major medical surgeries. Her epitome charity work resulted in a TEDx Shanghai talk in 2012 to share about her moving inspirations.

Lymphatic Drainage Therapy (LDT)
LDT is a gentle and non invasive technique that works through the body’s interstitial and lymphatic system.  It is beneficial to:

  • Activate the body fluid circulation, help to “re-route stagnant fluid (example: edema, lymphedema).

  • Drain toxins as part of treatment to promote tissue regeneration; helps evacuate fat content and protein-rich fluid.

  • Stimulate the functioning of the immune system.

  • Help reduce muscle spasm and pain LDT also includes advanced techniques such as lympho-fascia release to simultaneously release lesions in the fascia and fluids of the body and can be applied to fascia, ligaments, tendons or trigger points in the body.

Cranio-Sacral Therapy (CST)
What is craniosacral therapy? It is a gentle, hands-on method of evaluating and enhancing the function of the craniosacral system – comprised of the membranes and cerebrospinal fluid that surround and protect the brain and spinal cord.  It releases restrictions to improve the functioning of the central nervous system.  By complementing the body’s natural healing processes, CST is used as a preventative health measure for its ability to bolster resistance to disease.  It is effective for a wide range of medical problems including:

  • migraines/headaches

  • chronic neck and back pain

  • motor co-ordination

  • orthopedic problems

  • stress and tension related problems

  • TMJ

  • hearing problems

  • facial trauma (due to accident)

Seymour says:  It all started in Mt. Sinai Hospital, Toronto, Canada, September 1977. I, Seymour Koblin, or perhaps more accurately, my soul was floating above my bed looking down at my anesthetized body. The doctors had misdiagnosed an appendix attack. My appendix subsequently burst, and there I found myself above my ripped-open body with tubes draining my abdomen below. My new rising reality was such a great feeling -- free flying, smiling, higher and higher, up and away into the tunnel of darkness… when I heard a voice, “What are you doing, Seymour? Get back into your body. Seymour, you have work to do.” My startled self squeezed myself back into my body. I woke up the next morning and said to myself: “Ok, it’s time to take my life into my own hands.” After 6 weeks of tests and an unnecessary exploratory surgery, I was released from the hospital a week before my 24th birthday Oct 31, 1977.  I moved to New York City in March, 1978 to pursue my music career and began searching for a Tai Chi Chuan teacher to help me improve my health.

After my first 3 years of studying Tai Chi Chuan, Chi Kung, Nei Kung and Taoist meditation with Master C.K. Chu, practicing 5 hrs/day, I found myself wanting to know more about how Chi traveled through the body. I started studying Shiatsu with Wataru Ohashi.

In 1981, I took my first Oriental diagnosis class and realized I had more work to do if I was to reflect the the level of health I knew was possible. I added to my already busy study routine Macrobiotic classes with Michio and Aveline Kushi, Shizuku Yamamoto, and Anne Marie Colbin. I made frequent  trips back and forth from NYC  to Boston and Becket and eventually began assisting and scribing for Michio Kushi’s consultations at the Macrobiotic Center of New York.

Thus by 1984 I found myself nearing graduation from Ohashi’s school and becoming certified at the Kushi Institute. Ohashi failed me on my final practical shiatsu exam, saying this was the highest compliment he could pay me because “Seymour, you are destined to create your own style. Come work on me once you have developed your unique form of Shiatsu.” He gave me a list of 5 people to work on who had developed something unique after graduating from Ohashi’s school. I thus began developing Zen-Touch™, passed my test with Ohashi, moved to California, and started my own state-approved school in San Diego, California in 1989.

I knew that we had to offer more than Zen-Touch™ Shiatsu, so I developed a very wide and versatile curriculum at the school known as School of Healing Arts. Thirty years later, the school was acquired by Kieu Vo under the name International College of Holistic Studies. While I am no longer involved in the versatile academic programs at ICOHS, my activities at iSOHA in Prague, Czech Republic, San Diego, and other international schools and centers keep me focused on my personal work. My advanced Holistic Courses for Continuing Education are designed to take already practicing professionals to higher levels of expertise.

My personal work in Zen-Touch™ Shiatsu, Macrobiotics, Tai Chi Chuan, Chi Kung, Nei Kung, and Taoist meditation have shown me that the best way to learn is through the apprenticeship/mentorship model. While I spend a lot of time teaching and introducing larger groups of mainstream newcomers to the world of Holistic Health, I also spend considerable time teaching individuals and small groups of serious students who are interested in learning Holistic healing in a personal environment.

I learned the most when Michio or Shizuko showed me how to feel, assess, and make recommendations in a personalized way with the clients I assisted them with. I remember Shizuko guiding my finger on a client's belly to show me how to feel a fatty cyst, or a stone, or a tumor.  Michio would point out features and mannerisms of a client that led him to make a diagnosis and explain why this customized remedy he came up with would  be the perfect solution to alleviate a symptom. This experience is never communicated in books or classes. I carry on this tradition through my private internship training.

Seymour has written, The Art of Zen-Touch™Shaping Our Destiny, Home Remedies, Chi Cultivation and Circulation and Food for Life, which present helpful education that becomes complete when studying in the internship format. The poetry, illustrations, and general writing style in them convey a change in consciousness style that make the books bigger than the information on the pages.

Chuck Lowery

Born, raised and still living in Southern California, Chuck was introduced to healthy lifestyles at age 22. A routine check-up opened his eyes when the doctor emphatically stated “Diet has nothing to do with your health!” Upon hearing that proclamation, Chuck went out and bought the book “You Are All Sanpaku” by William Dufty and read it while on vacation.

It was a life-changing experience.

As Chuck’s interest in the vegan-macrobiotic diet/philosophy grew, he studied and worked with Herman and Cornellia Aihara for more than two years. They inspired him to co-found Pacific Bakery, an all-organic, whole grain bakery with quality in mind. Twenty-plus years later, he sold the bakery and moved on to run for city council and is now Deputy Mayor of Oceanside, a position he still holds today.

Chapati & Pizza Extravaganza: Back By Popular Demand!
It’s time to learn something completely different… and have fun doing it. 

Chuck Lowery, former owner-operator of Pacific Bakery in Oceanside, California, will take over the camp kitchen, make an essential dough, and fire up the stovetop to get cooking. If you’re one of the 15 who sign up to participate, you’ll do the same.

Anyone can learn to make a truly artisan bread starter. Brief printed instructions and overview in class will enable you to take your baking skills, whatever they may be, to greater heights. 

Mixing the dough by hand or machine, everyone will learn how to measure, shape and cook traditional chapati, a ancient form of tortilla. Using whole grain spelt flour, you’ll be amazed that such good food can be made with so few ingredients…and without yeast!

This workshop is moderately demanding and we will be moving rapidly around hot equipment. We will use the kitchen during the lunch break but no worries: Everyone will enjoy the day's lunch, but not all at the same time. Plan to bring a hair cover, wear long pants, and covered-toe shoes. An apron is suggested.

Registration is limited.
Workshop fee of $25 includes basic recipes and delicious samples during the workshop.

The pizzas are consumed by workshop participants who will taste the fruits of their labors!

Tim Martinez works for Arroyos & Foothills Conservancy to preserve, restore and protect open space in the San Gabriel Mountains. An expert on the uses of Southern California’s native plants, he is also an experienced macrobiotic cook and a graduate of Macrobiotics America - Macrobiotics Global Counselor Training Program. Tim is passionate about the history and traditional diet of his MesoAmerican and Celtic ancestors.

Explore how tinctures, teas, and other herbal medicines can be used to relieve pain, boost immunity, and more.  Learn to process and cook with prickly pear cactus (nopales) the traditional cure-all of Mexican culture.  Sample a cactus taco cooked over a wood flame!

Saci McDonald

Saci has studied Energy Kinesiology (EK) since 1996; earning her certificate from The Kinesiology Institute under the leadership of John Maguire. She has been teaching EK domestically and abroad since 2012 and is currently on the faculty of the Kinesiology Institute. She has also been fortunate to have studied with two masters in the EK field, Dr. Sheldon Deal and Carla Hannaford, PhD. Saci has accumulated thousands of hours of experience working with clients in her private practice, the offices of chiropractors and the post-event therapy tents for athletic events. 

Saci undertook a 4 year apprentice in Breathwork starting in 1990 with Maia Dhyan. (Maia studied with worldwide Breathwork founders Leonard Orr and Sondra Ray.) Saci began leading Breathwork groups in 1991 and has done so ever since across the US and in the UK.

Gordon Saxe is a board-certified Preventive Medicine physician, nutritional epidemiologist, and co-founder of the UCSD Centers for Integrative Health. A student of Michio Kushi in the 1980's and 90's and a practitioner of macrobiotics for over 35 years, he has been a pioneer in the field of Nutritional Oncology and studied the diet - cancer relationship - from both eastern and western perspectives - at a very deep level.

His research on pancreatic cancer in the 1980's at Tulane University was the first to systematically examine the effect of macrobiotic dietary practice on cancer outcome. Later, his research at the University of Michigan in the 1990's helped establish some of the mechanisms by which diet may influence the underlying biology of breast cancer. And more recently, his research at both the University of Massachusetts and the University of California, San Diego was the first to address the effectiveness of the combination of a whole food, plant-based diet and mind-body disciplines in helping to control the spread of advanced prostate cancer.

Gordon now oversees the Krupp Fund, the largest philanthropic endowment in the U.S. specifically devoted to the study of diet and natural medicine in the prevention and treatment of disease. To help the Krupp Fund achieve its transformative potential and have the widest possible impact, he and his colleagues also established the UCSD Center for Integrative Nutrition. The Center offers clinical, research, and educational programs and serves as an incubator of ideas and scalable solutions around the use of food as medicine and the science of nutrition.

"Food As Medicine" - Lecture Class Series - 3 Classes Total
Gordon Saxe will be discussing the launch of the largest-ever research endowment devoted to the study of food-as-medicine, the Krupp Endowed Fund at the University of California, San Diego School of Medicine. One of the main areas of focus of the endowment will be on the ability of a whole food, plant-based diet (inspired by macrobiotics) to prevent, arrest, or reverse a number of conditions - heart disease, cancer, blinding eye diseases, rheumatoid arthritis, endometriosis, and many others - seen across a range of subspecialties. One of the key questions for discussion will be on how to leverage the change in practice brought about by this research - by connecting it with the work of like-minded networks and movements - to help unleash an exponentially-growing, food-based transformation of individual, societal and planetary health.

John Stewart

John Stewart loves food and loves to cook. As a child, he enjoyed his mother’s cooking but when she went to school and became a nurse he and his brothers began to do a lot of the cooking. 

For more than 30 years John taught elementary and high school. He divided students into teams and studied foods of different countries, taught dances and cooked dishes pertaining to the nationality as part of the class. He conducted a Chinese cooking class for ten years in a community college. He traveled extensively in Israel and Europe. He led 28 people on a tour of Ireland, Scotland, and England. Later helped students build a solar bike, took students and parents to Missouri, then on to Japan to win solar bike races. Spent two weeks traveling in Japan with the event and organized students/parents to home stay.

A few years ago, he was diagnosed with lymphoma and refused traditional cancer protocol. In his search for natural treatments, he found macrobiotics. Since that time he has studied under macrobiotic counselor Cynthia Vann and has been on the diet ever since. He is also a student of David Briscoe’s Macrobiotics America Counselor Training course.

John loves making foods from scratch, such as sauerkraut, natto, tempeh, tofu, and basic sprouted grain sour dough bread. He enjoys teaching others to create delicious, healthy food for a happy life.

He is an accomplished weaver, and has woven hundreds of dishtowels/dishcloths and was commissioned to weave dinner napkins for an elite resort.  He has designed and woven several haramakis and prize-winning baby wrap/sling and beautiful scarves. And John is a skilled artistic woodworker. He has designed and built several award-winning tables and wood turnings.

So you have seen solar cookers on the internet but never up close? Now's your chance to check it out. "How to Cook Rice with the Sun" is the first part of John's informative class. Next he will dazzle you with "Healthy, Hearty Overnight Waffles" that are oh so healthy and delicious. Wrapping class up with "Happy Healthy Sprouting", setting it up so that later in the week he can show you how simple it was to grow your very own sprouts.

"Thriving on Leftovers" - Cooking Class
Join John for a cooking class focusing on creative ways to use leftovers. Join him for "Travel Rice Balls",
a "Skillet Meal Using Sprouts" and "Samosas". New ideas for mixing it up in the kitchen for an ever-expanding menu and no waste.

Spinning With A Drop Spindle
Using the wool roving provided, each person will learn to spin yarn with a hand-crafted drop spindle.

Materials and the use of a spindle will be supplied for $20.
Participants can also purchase the spindle for an additional $25.00.

The spindle class consists of  three sessions - one class at the beginning of the week, one midweek and one to wrap up the end of the week. Spinners will be expected to practice during the week on their own time.

Masayo Sugimoto

Born in Japan and after extensive training and service there with Shumei, a spiritual fellowship, Masayo relocated to Shumei America's National Headquarters in Pasadena, California a decade ago.  Shumei promotes Jyorei, a healing art, and encourages the practice of Natural Agriculture, which is a means of growing food from pure seed in unamended soil. Purifying Morning Chanting “ Heavenly Chant”

Masayo will share an old Shinto style chant called “Amatsu Norito ( Heavenly Chant)” to help bring clarity, vitality and peacefulness for the day. The vibration of the chant will align your energy and purify all directions surroundings. It takes about seven minutes to intone the chant, and when you follow along, you will feel the energy coming from your inner body. 

After the chant, Masayo will offer individual Jyorei sessions (lasting five minutes or so) to anyone would like to receive during the program hour. Of course, anyone is welcome to remain in this calm and peaceful space for quite reflexation or meditation!

Shirley Tung

Shirley was born in Phoenix, is widowed, and has 2 grown sons. She has a BS in Nursing, a MA in Pastoral Ministry and a MA in Feminist Spirituality. Shirley has worked in medical/surgical nursing, emergency room nursing, office nursing, as a porta-medic (insurance physicals), in retail businesses and as a specialist in adoptions and foster care in Arizona.

Shirley was Manager of Real Estate and Coordinator of Refugee and Social Justice Issues. She is an activist in political issues, frequently doing civil disobedience. She has taken classes for 17 years in Tai Chi and is now doing “weapons and 2 persons sets.” Shirley is a certified teacher of qi gong which can be found on the website of Master Hong and is also certified in Yang style Tai Chi with Kai Yung Tung, L.A. through David Block in Phoenix. She has taught Tai Chi and Qi Gong at Phoenix College, Sun City groups and at Camelback Inn Resort.

Shirley is currently enjoying life mountain climbing and traveling to all the major church conferences as an exhibitor to fundraise for migrants and other justice issues.

Cynthia Vann

Retired from the Air Force in 1993, Cynthia discovered macrobiotics at the Kushi Institute in 1995 which started her on a lifelong journey studying macrobiotics and its principles. She has attended Level studies at Kushi Institute and completed David Briscoe's counselor program. Cynthia has studied both iridology and sclerology incorporating eye studies into her counseling. She edited the Best of East West, 4 seasonal cooklets of recipes from the East West Journal in support of Planetary Health, Inc. and is a member of the Planetary Health board. She has written for both Macrobiotics Today and Amberwaves. She enjoys the outdoors and reading science fiction.

Macrobiotics and Alcohol Addiction - Lecture

Can something as simple as diet overcome addiction with it's complexities of psychological imbalances? I say yes and share with you my own story of how I stopped alcohol addiction in its' tracks. The process of overcoming addiction starts with becoming aware that you are risking your life for something that you think you need. If you say yes to life, you will stop. I will discuss how to see addiction to extremes in the face and body, how much is too much, recovering a stable blood sugar with macrobiotics, and the aftermath of stopping alcohol.
